À son ouverture au printemps 2011, le restaurant parisien Septime crée une petite révolution dans le milieu de la gastronomie. Bertrand Grébaut, qui s'est formé auprès d'Alain Passard et Joël Robuchon, est de cette nouvelle génération de chefs qui veulent bousculer les codes de la restauration traditionnelle. Grébaut et son associé Théo Pourriat s'affranchissent du classicisme tout en le réinterprétant, et font souffler un vent de légèreté et de modernité en cuisine. Septime, est un lieu chaleureux aux allures de bistrot. Enfin, D'une île, magnifique ferme en pleine campagne du Perche, accueille ses hôtes avec une Poularde en cocotte lutée ou des Choux à la crème infusée à la f louve odorante. Entre cueillette sauvage et potager, cet environnement naturel devient pour le chef source d'inspiration autant que de respiration. Bertrand Grébaut attended the famous Parisian culinary school Ferrandi. He then trained with the 3-Michelin-star chefs Joël Robuchon and Alain Passard and, in 2011 at the age of 30, in partnership with his high-school friend Théophile Pourriat, he opened Septime in the 11th arrondissement of Paris (currently #15 on the World's 50 Best Restaurants list). This was followed by La Cave (a tiny, bustling bar specialising in natural wines), Clamato (a crowded seafood-oriented spot), and their charming countryside guesthouse D'une île. With a preface by Alain Passard, legendary chef and owner of the three-Michelin-starred restaurant L'Arpège in Paris, France, and iconic natural winemaker Thierry Puzelat from Clos du Tue Bœuf.
